Mayonnaise Chicken

Ingredients:
1/2 c. Miracle Whip or mayonnaise
1/2 c. Parmesan cheese
1 tsp. dry Italian dressing mix
4 or 5 boneless skinless chicken breasts

Directions:
Mix Miracle Whip, Parmesan cheese & Italian dressing mix together. Brush each chicken breast with mixture.

Broil or grill 8-10 minutes each side. Rebrush after turning. Serve alone or as a sandwich.

Cheesy Potatoes

Ingredients:
4 or 5 thinly sliced potatoes (scrub & leave skins on)
1 can cream of mushroom soup
1-2 c. grated cheddar cheese

Directions:
Lay potato slices in 9x13 baking dish in rows like fallen dominoes. Cover potatoes with cheddar cheese. Spread mushroom soup over top.

Bake at 350 for 1 hour or until potatoes are tender.

Taco Pie

Ingredients:
1 lb. ground beef
1 pkg. dry taco mix
1/3 c. chopped onion (or Tastefully Simple Onion Onion works good)
1 c. water
1 pkg. crescent rolls
1 c. sour cream
1 c. grated cheddar cheese
2 c. crushed Doritos

Directions:
Brown beef with onion; add water & taco mix. Simmer 5 minutes or until water is evaporated. Spread rolls on bottom and sides of lightly greased 10-inch pie plate or shallow casserole dish. Spread 1 cup chips over dough. Cover with meat. Spread sour cream over meat, then cheese. Top with remaining cup of chips.

Bake at 350 for 20-25 minutes. May be topped with fesh tomatoes.

Peanut Butter Cup Bars

Ingredients:
1 pkg. graham crackers, crushed (approx. 1 cup)
4 cups powdered sugar
1 cup & 1 Tbsp. peanut butter
1 cup margarine, melted
2 cups chocolate chips

Directions:
Mix together graham cracker crumbs, powdered sugar, 1 cup of peanut butter & margarine. Spread in ungreased 9x13 pan. Pat down firmly.

Melt together chocolate chips & 1 Tbsp. peanut butter, stirring until smooth. Spread over first layer. Chill & serve.

Sloppy Joe's

Ingredients:
1.5 lbs. ground beef
1 can tomato soup
2 Tblsp. brown sugar
mustard

Directions:
Brown the ground beef - drain excess grease if necessary. Add the soup and brown sugar; add mustard to taste. Let simmer 5-10 minutes or until ready to eat.

Fruit Salad

Ingredients:
1 can Eagle Brand milk
1 lg. can cushed pineapple, drained
1 (8 oz) carton Cool Whip
1 can pie filling (so far we like cherry or strawberry best)

Directions:
Mix all 4 ingredients. Chill for about 12 hours before serving.

Angel Lush

This is a wonderful low-calorie/ low-fat dessert. I got this recipe from Kraftfoods.com. Enjoy!

1 can (20 oz.) crushed pineapple in juice, undrained
1 pkg. (4-serving size) JELL-O Vanilla Flavor Fat Free Sugar Free Instant Reduced Calorie Pudding & Pie Filling
1 cup thawed COOL WHIP LITE Whipped Topping
1 pkg. (10 oz.) round angel food cake
10 fresh strawberries

MIX pineapple with its juice and the dry pudding mix in medium bowl. Gently stir in whipped topping.
CUT cake horizontally into three layers. Place bottom cake layer, cut-side up, on serving plate; top with 1-1/3 cups of the pudding mixture. Cover with middle cake layer and an additional 1 cup of the remaining pudding mixture. Top with remaining cake layer; spread top of dessert with the remaining pudding mixture.
REFRIGERATE at least 1 hour. Top with strawberries just before serving. Store leftover dessert in refrigerator.

Calories: 140 per serving with only 1 gram of fat.
